  1. Stir together the gelatin powder and the cold water, set aside.
  2. Put the sugar, 1/4 cup (65 ml) liquid glucose and 1/4 cup (65 ml) water into a saucepan and place on a medium heat. Warm the mixture until it reaches 250 °F (120 °C). Use a sugar thermometer for this.
  3. Place the gelatin powder/water mixture in the microwave for 30 seconds. Put the remaining 1/4 cup (65 ml) liquid glucose into a mixing bowl. Add the warmed gelatin and whisk on low speed.
  4. When the sugar syrup is 250 ˚F (120 ˚C), take the saucepan off the heat and carefully pour the syrup into the mixing bowl, mixing on low speed. Increase the speed to medium and mix for 5 minutes, increase the speed to high, add the vanilla extract and mix for another 5 minutes.
  5. In the meantime, prepare the heart shaped silicone molds by spraying the cavities with non-stick baking spray.
  6. When the marshmallow mixture is ready (it will set quickly, so be sure to work as quickly as possible) transfer the mixture to a piping bag fitted with a wide circular tip and pipe the mixture into the molds. Place one conversation heart candy onto each marshmallow heart, press down gently. Dust the marshmallows with plenty of sifted powdered sugar & done!
