  • 2 large yellow oranges, peeled and grated into 6-12 slices
  • One pound of large scallop
  • 10-12 small dried red chilies (or red pepper flakes, to taste)
  • 1 large cucumber, grated
  • ¼ cup roughly-chopped fresh cilantro leaves
  • 3 tablespoons fish sauce, divided
  • Fresh lime juice
  • 4 tsp of sugar [depend on your way of tasting, may add more or less]
